My weddings have included various symbolism components including Sand Blending, Handfasting (or Tying of the Knot), Vows of the 7 Steps, Rose Exchange and many more.

Also consider a 'Themed Wedding' for example a Medieval or Romantic Period Wedding or a Beach Theme where everyone dresses up accordingly.
